I loved Linda Amendt's first canning cookbook, Blue Ribbon Preserves: Secrets to Award-Winning Jams, Jellies, Marmalades and More, and eagerly awaited the release of this new preserving book. I wasn't disappointed. This book is amazing! The impressive collection of spreads and creative combinations of flavors are awesome. I never knew there could be so many wonderful things to spread on toast! Just imagine - a whole book dedicated to delicious jams, jellies and other tantalizing spreads.
The book has a really nice layout with one recipe per page and longer two-page recipes placed on facing pages so you don't have to turn the page to follow the recipe text. The recipe instructions are complete and straightforward, making them very easy to follow. There are even two extensive and thorough chapters on Soft Spread Basics and Canning Made Easy so the book is perfect for both seasoned canners and those new to home canning.
The wide variety of recipe chapters range from Single Fruit Jams, Mixed Fruit Jams, and Jellies to Marmalades, Preserves and Conserves, and Butters and Curds. There are even exciting chapters with awesome recipes for Savory Spreads and Drunken Spreads. The sixteen pages of full color photographs are gorgeous and made my mouth water just looking at them.
I was so excited that I couldn't wait to get into the kitchen and start canning. So far, I've made Strawberry Daiquiri Jam, Pear Lime Jam, Apple Pear Preserves, Blueberry Pie Preserves, Orange Juice Curd, Tangelo Marmalade and Basil Jelly. Oh, my goodness! All of them turned out beautifully and the flavors are out of this world!! My family and I are in preserves heaven!!!
I can't wait for cherries, plums, apricots and peaches to come into season so I can make Cherry Almond Preserves, Plum Cherry Jam, Apricot Pineapple Marmalade, Apricot Amaretto Jam, Strawberry Peach Jam and Peacharita Jam. Yum!
Linda Amendt sure knows her subject and this fabulous book is an absolute must for every home canner's library.

The recipes are very simple. Usually requiring a few steps for small batch jams and preserves. However, it is not for the inexperienced unless they have good back-up books like _Blue Ribbon Preserves_ which explains clearly how to sterilize and prepare jars and focus on a more scientific approach to preserves.

Ferber provides flavor inspirations and deceptively simple approach. However, there is no explanation in the book for pectin substitution. She relies on either the natural pectin found in the fruit or uses green apple jelly as a pectin base which means you get to make alot of green apple jelly adding a whole set of steps to the jam/jelly process. The book does not explain which fruits have enough natural pectin to set and what level of set.

If you know what it means to skim the juices already then the simple instructions are enough to work with but if you have no "feel" or previous knowledge of preserves making than the instructions seem skimpy. This is NOT a teaching volume it is an inspirational volume for the experienced preserves person.

The important thing though is that the flavors are fabulous. Just be sure to read the instructions first and research carefully your subsititutions and also your preserve process or else the simple instructions become too simple.

Recommended for the collection.

This book is wonderful! The recipes are outstanding and the selection is impressive -- from jams and jellies to ice cream toppings and pie fillings, and everything inbetween. The text at the beginning of each recipe chapter and the separate chapters on tools and ingredients are very interesting and informative. I appreciate the author's attention to detail and her emphasis on using proper canning techniques so that the food you prepare for your home table will be both delicious and safe to serve.
I have made dozens and dozens of recipes from this book and they have all turned out great -- outstanding flavor with beautiful color and perfect texture. The Salsa Jam, Banberry Jam, Cherry Marmalade, Peach-Pineapple Preserves, Jalapeno Jelly, Strawberry-Raspberry Jelly, Asian Marinade, Basil Marinara Sauce, Pineapple Upside-Down Ice Cream Topping, and many more have become family favorites.
I never had much luck with jams made using the long-cook method, or homemade pectin. They took forever to make, it was nearly impossible to figure out when they were done, and they just never worked right. My jams ended up being either thin and watery or overcooked and hard as rubber. So, I really appreciate the wide variety of traditional and exotic soft spread recipes the author offers that use packaged pectin. Now, my jams turn out perfect every time and they are very quick to prepare. For people who still prefer to make spreads using the long-cook method, there are several chapters in this book filled with many other wonderful recipes that make it well worth the purchase. There are recipes for butters, curds, fruit, juices, vegetables, pickles, sauces, vinegars, syrups, liqueurs, pie fillings and ice cream toppings.
I had never thought about entering my canned goods in a fair competition but, after reading this book, I just might try it myself for fun. It was interesting learning how judges use the USDA standards to evaluate the entries plus the flavor and texture criteria that are used to choose the winners. I now understand the reasons why it is so important to only use the approved, modern methods of canning and processesing, not just for fair competitions, but also for the foods I will serve daily to family and friends.
This is an excellent cookbook and I highly recommend it for both experienced home canners and those who discovering the fun and joy of home canning for the very first time.

I love that author Karen Solomon considers her new cookbook, Jam it, Pickle it, Cure it, to be a handbook for kitchen food crafting. I often lament the fact that I'm not crafty in the traditional sense. Knitting gives me anxiety, painting makes me angry, and God forbid I try to sew anything, but I certainly know how to use my KitchenAid mixer and with this book as a guide I may yet find my very own alternative craft niche in the world.
While paging through the cozily styled recipes in this book I found myself hard pressed to find a project that I didn't want to try. Homemade Apple Butter - bring it on! Pickled Green Beans - when does the farmer's market open?! And if I have two weeks to spare I can even make my own bacon. Perhaps the item I'm most excited to try my hand at is Strawberry Jam. I'm honestly not sure if I can contain my excitement until June when the strawberries will be at their peak of juiciness in New England.
All of the recipes have thorough and thoughtful instructions. This cookbook will absolutely not disappoint and would make a wonderful gift.

I am giving this cookbook 5 stars for originality and information, and only 3 stars for ease of use.
If you are a beginner, I recommend Ball Blue Canning Book #21400 for your first tries. While these recipes require pectin, they do not require the more extensive methods required in this book, and the information is a little less intimidating. Most of my first tries came from this book.
If you have a little experience under your belt, this is an AWESOME book.
It begins with the history of canning and preserving and a great deal of information on why it all works. This information is expanded at the beginning of the chapter on each fruit. That information is necessary, since all of these recipes are designed to avoid the use of pectin except what is naturally occurring in the fruit. As a result, most of the recipes require additional steps to ensure success.
Ms. Ziedrich is an experienced cook and incorporates many advanced techniques and equipment that the "newbie" probably does not have in his or her kitchen, including a food mill and steam juicer, however, she offers simple alternatives that you can use instead.
While the title calls this book "sweet preserves," there are a number of vegetables included: carrots, pumpkin & winter squash, and even a method for preserving zucchini. It also includes items you won't find in normal preservation books - I didn't even know bananas, kumquats, or cantaloupe COULD be canned! The recipe for Coconut Caramel Jam starts with instructions on opening a coconut!
AND this is not simply a "canning" recipe book. It includes recipes for fruit leather (you need a dehydrator for these), cherry flavored brandy, methods for preserving nuts, and many other original ideas.
Our county fair just ended (I got 3 blue ribbons this year), but I have found several recipes here that I WILL be using in next year's fair! I am grateful that I had the chance to try this through the Amazon Vine program, and I have a couple of friends I will be buying this for come Christmas.

Not to worry with the wonderfully comprehensive guide, THE BLUE CHAIR JAM COOKBOOK, we can have jam every day in an apparent endless variety of that sweet spread. Whether your preference is for a plain lemon marmalade or strawberry jam you'll find variations of these and so much more in this 364 page tribute to preserves.
Founder of the Bay Area jam company Blue Chair Fruit Rachel Saunders has a passion for fruit which is evidenced in every recipe and mouth-watering illustration in this remarkable collection. She presents a loving, detailed discussions of various fruits, a technical section and, of course, her incomparable original recipes organized around the seasons of the year.
Okay, I admit it - initially I was intimidated by the thought of making jam. But soon happy memories of my grandmother's kitchen filled my mind, and I could see her stove covered with kettles and glistening jars of jams covering the kitchen counter. This is one of those "If I can do it, anyone can" comments: For me, the directions found with the recipes are step-by-step clear and precise. As in the recipe for Early Summer Peach Jam with Green Almonds, which begins with Day 1 and the preparation of the peaches. (To be placed in sugar and lemon juice and left to macerate in the refrigerator overnight.) Then on to Day 2 and the final steps. She specifies the type of utensils to be used ("...a copper preserving pan or two smaller rnonreactive kettles.") No need for guess-work when following her directions - even individual yields and shelf life are included. Clearly, this is someone who is dedicated to her craft and is happy to share the joy and fun of jam preparation with all.
While certainly precise in her recipes Saunders is far from a stickler for her preferences - she encourages cooks to prepare their own unique jams by following their preferences and tastes.
