This was a disappointment for me, as I was hoping to learn about canning the harvest of my garden. It has very little to do with vegetables. It is primarily focused on fruit-based products. I think it would be a great book if that's what you're interested in. But, please choose another book if you're looking for tomato, bean, and basic vegetable recipes.

This book is a guide to preserving fruits and vegetables while avoiding processed sugar. Although the book refers to honey in the title, not all the recipes use honey, but they all seek to preserve food in natural ways, without sugar or other questionable additives. The book begins with a short introduction describing canning methods and equipment. Then there are chapters on jams, preserves, butters and conserves, canned fruits, pickling, and dried foods. An appendix contains useful charts with amounts of food to be grown and canned for a family of six, a calendar showing which produce items are likely to be in season when, and some tips for canning. Specific canning tips for different techniques are also included in each of the chapters. There is an index.
I've tried several of the recipes in this book and found them to be straightforward to follow, and the end results have been tasty. Geiskopf includes a nice selection of berry recipes and some for rhubarb as well. Her recipes for dips to be used with dried foods as alternatives to sulfur preservation are particularly useful. However, the introductory material about canning can be a bit confusing. The explanations and instructions are a little hard to follow. Fortunately, clear descriptions of canning methods can be found in numerous other books, so if you use this book just for the recipes and get your canning information elsewhere, you should have no problems.

A lot of times when you pick up a canning book it seems to have all the same, worn out recipes. This one is completely different! I am so inspired to go into my kitchen and start making gifts for friends, let alone canned goods for my family.
Sure there are a few takes on the classics (like bread and butter pickles) but then you find recipes like:
- Chrysanthemum soup (and other edible petal recipes)
- caramelized red onion relish
- Asian vinaigrette
- Bourbon mustard
- Watermelon pickles
and even homemade salami! There's so much more that this list hardly does the book justice.
For people who want to know what's truly IN their food, and who want to save money by buying in bulk this book is an incredibly useful resource. I had gone looking for something that could teach me what my grandmother knew, but also give me safe guidelines and great inspiration -- this book does all three!
I've already made many blends and find the directions easy to follow and the results very successful.

I have been canning for over 20 years, and without a doubt, this book provides the best instruction on how to can properly. This is important if you want to successfully can, and enjoy the food you can.
First: you are provided with numerous methods on how to can, water bath and pressure cooker for instance.
Second: you are provided with chart of what type of processing works best for which type of food (main ingredient in your canning).
Third: you are provided with a chart on how long to process each type of food, and better still, they have not forgotten that people are not at the same elevation across the country. As someone who started canning in Iowa and then moved to Colorado, this book makes all the difference.
Fourth: you are provided with clear, easy to follow recipes (many of these have been around for generations).
Fifth: the final products taste good! I gladly share the canned products with friends and family. Many items end up as birthday or Christmas presents.
Whether you are a novice, experienced, or somewhere in between to canning, this is a must have book.

I've read this cookbook cover to cover, sampled some recipes, and I'm impressed! Karen Ward took all the guess work and concerns I had out of both canning and preserving. The balance of taste in her recipes is extraordinary. Her Pear Chutney's the best I've ever had (and I've had plenty). My husband adores her bread and Butter Pickles! A great cookbook to have on hand to make holiday food gifts, too.

I wanted to begin putting up food like my grandparents but didn't have the background or knowledge. After reading this book, I feel like the expert. Extremely easy to understand and very useful. From storing garden vegetables in the Fall to putting up pickles, making raspberry jam, canning tomatoes, this book is excellent. Expert safety advice, how-to instructions, recipes, diagrams, etc. This is the only book you should need to begin putting up your garden produce. This really is the canner's bible!

It offers information on all types of preserving and storing, from the canning to root cellering, it has been an extremly helpfull book. I know it is a reference I will use forever. This book is a great idea but not very well executed. The recipes are smaller which is nice but I was disappointed that many of them are supposed to be stored in the refrigerator. That's leftovers NOT food preservation. There are several better books out there--The new Ball Complete Book of Home Preserving is absolutely the best and most reliable book and has many small batch recipes included. If you can find copies of Sunset Home Canning (1993), The Food Lover's Guide to Canning (1997) or Canning by Sue and Bill Deeming (1983) you will have a wealth of reliable, creative canning recipes.

I got this book about three weeks ago, having never canned or preserved, and I was completely impressed. Using the recipes inside, I've made pickled ocra, green beans, brandied cherries, sweet asparagus, and the hands down best pickle relish I've ever had in my life. It has hundreds of recipes, and they are all wonderful. If you're into fruit preserves or jams, sweet or dill pickles, slasas, relishes, chutneys, condiments, you name it, there are dozens of recipes of each type of food. I'll be tackling some home made wine and cranberry mustard next week. The first batches of pickles I made were with utensils I already had on hand. All you need is the mason jars if you have a well stocked kitchen. I've sense bought some bottle clamps to get the jars out of the hot water, but that's about it.

I think the book is well done. It includes more fancy type recipes, than I expected, which was refreshing; but I pretty much stick to the basics because I share what I make with others, and some aren't as willing to try different flavors in their jams. I also expected to find at least three home-made cheese recipes, given the description of this product prior to my ordering it.

There are some scrumptious recipes in this book. The photographs are lovely. The writing is clear. There are lots of recipes and ideas not found in American canning books and all the recipes include American measures. However, if you're a stickler for canning the way the U.S. government recommends, you will find many recipes un-usable . The author recommends not only hot water bath and pressure canning, but sealing jars in the oven, or just turning over jars to seal. However, these methods have been used *for certain types of recipes* for many years, so I feel fine using them.
You'll find information on how to preserve fruits with sugar and drying ("candied fruits"), preserving fruits in alcohol, plus lots of great recipes: jams, jellies, marmalade, butters, curds, "cheeses," pickles, chutneys, relishes, sauces, and more.

Anne V. Nelson's "The New Preserves" is an inspiring and extremely useful book. Starting with an introduction where she explains why fruits and vegetables should be preserved even nowadays when we can buy most produce year round, she guides the reader from the basics of the preserving to the actual recipes and even suggestions for further reading.
In the "Basics" section she'll teach the reader all one needs to know about how preserving works, what are the key ingredients, what kind of equipment would be needed as well as where to find all of the ingredients and equipment. She also adds a bunch of truly useful and no-nonsense tips and tricks. (Did you know which end of the cucumber you should slice off if you want extra crispy pickles? Get the book - this is just one of many useful tips in it...)
The following four chapters focus on recipes, divided by the kind of preserving used. The first batch of recipes deals with "Instant Gratification," which includes such varied items as marinades, refrigerator pickles, salsas, relishes, fruit syrups, Jello's and more. All of the recipes are extremely well explained and easy to prepare and the results can be eaten almost immediately. This would be a great start into the pickling world if you've never attempted any such items before.
Next on the list are pickles and relishes. If the word pickle brings to mind cucumbers only, you definitely need to read this book - you'll be absolutely amazed at the items that could and should be pickled -- Pickled pears or watermelon rinds, anybody?
The book continues with "Staying Sweet," by which Anne V. Nelson means jams, jellies and other fruit preserves. The ones that I am most tempted by and will have to attempt to make when good, ripe fruit is available are the fruit butters. They sound very much like a sophisticated, adult-geared version of your usual jams. Next summer they are going to get a test run in my kitchen.
The last chapter deals with flavored vinegars and alcohol infusions. If you've ever looked at those products in the stores, and decided that they sound interesting, but are just a bit too pricey for you taste, you'll be pleasantly surprised to discover how easy they are to make at home. I found this book well written, informative and warm. The recipes were super easy to follow and written in an extremely organized manner. While I enjoyed the drawings and the unusual orange color of the print, I do wish that the book would include photographs showing what the finished preserves look like. All the little additional tips and tricks alone would be worth the price of this book. This should be a must read - and buy! The New Preserves" is for anybody who enjoys cooking and who cares about healthy, high quality food items.

I loved Linda Amendt's first canning cookbook, Blue Ribbon Preserves: Secrets to Award-Winning Jams, Jellies, Marmalades and More, and eagerly awaited the release of this new preserving book. I wasn't disappointed. This book is amazing! The impressive collection of spreads and creative combinations of flavors are awesome. I never knew there could be so many wonderful things to spread on toast! Just imagine - a whole book dedicated to delicious jams, jellies and other tantalizing spreads.
The book has a really nice layout with one recipe per page and longer two-page recipes placed on facing pages so you don't have to turn the page to follow the recipe text. The recipe instructions are complete and straightforward, making them very easy to follow. There are even two extensive and thorough chapters on Soft Spread Basics and Canning Made Easy so the book is perfect for both seasoned canners and those new to home canning.
The wide variety of recipe chapters range from Single Fruit Jams, Mixed Fruit Jams, and Jellies to Marmalades, Preserves and Conserves, and Butters and Curds. There are even exciting chapters with awesome recipes for Savory Spreads and Drunken Spreads. The sixteen pages of full color photographs are gorgeous and made my mouth water just looking at them.
I was so excited that I couldn't wait to get into the kitchen and start canning. So far, I've made Strawberry Daiquiri Jam, Pear Lime Jam, Apple Pear Preserves, Blueberry Pie Preserves, Orange Juice Curd, Tangelo Marmalade and Basil Jelly. Oh, my goodness! All of them turned out beautifully and the flavors are out of this world!! My family and I are in preserves heaven!!!
I can't wait for cherries, plums, apricots and peaches to come into season so I can make Cherry Almond Preserves, Plum Cherry Jam, Apricot Pineapple Marmalade, Apricot Amaretto Jam, Strawberry Peach Jam and Peacharita Jam. Yum!
Linda Amendt sure knows her subject and this fabulous book is an absolute must for every home canner's library.
